Eggs are laid by female animals of several species like birds, reptiles, mammals and fish. Eggs are common food source of human for thousands of years and are consumed widely across the world. Eggs consist of albumen (egg white), vitellus (egg yolk) and egg shell. Outside shell of the egg is hard and protective covering; it is made of calcium carbonate. The shell is a semi permeable membrane, air and moisture can pass through its pores and has a thin coating which keeps away bacteria and dust. Chicken eggs are mostly preferred and consumed. Other than chicken eggs, duck, quail and caviar eggs are also used for consumption and they differ in size and flavour. Eggs are most versatile ingredients used in cooking different varieties like dishes, baking, ice creams and sauces.
